This classic Galician cheese is very mild, soft, milk-forward, and sure to please people who do not like strong cheeses. Sometimes referred to as queixo do pays, meaning “cheese from the land,” it is a DOP (denominación de origen) cheese produced exclusively in Galicia with milk from cows grazed on the verdant pastures that cover much of northwestern Spain, then aged for just a couple of weeks.
