Named for a French Basque town from the province of Behe-Nafarroa, Urepel pays homage to Ossau Iraty, a classic Basque sheep’s milk cheese. The cheese is produced exclusively from December through July, with just about 2000 cases released each year. Aged six months, it is regularly washed during its aging, developing a thin tan-colored rind, semi-firm texture, and distinctive, complex flavor with notes of fresh grass and toasted nuts.
