On Nathan Miller’s last podcast as host of Finding Asheville, he interviews Chef Katie Button, chef and co-owner of the “most consistent and exciting restaurants in Asheville,” Nightbell and Cúrate Tapas Bar.
She discusses her professional and personal history, ranging from her youth in Conway and Greenville, South Carolina, to high school in New Jersey, college years at Cornell and Paris, and restaurant work in D.C. and at El Bulli.
Katie emphasizes understanding limitations and being courageous enough to ask questions. In life, this has been so important to her getting to where she is today.
They discuss many topics from education to food, including the difficulties in her education, the trial-and-error process when conceptualizing new dishes and collaborating with her staff.
Katie’s path led from succeeding at science as a student to realizing “something was missing” and that “cooking really made [her] happy.”
After travel and some soul-searching, she says she made restaurant work her career, and you can taste the results in downtown Asheville.
